Creamy Manuka Honey Crepe for One

This naturally sweet crepe is the perfect breakfast for one. Filled with juicy strawberries and Capilano Active Manuka Honey, you'll have a spring in your step for the day ahead!

30g vanilla pea protein powder or almond meal + 1 tsp extra sweetener
2 large eggs, whisked
10-20ml almond milk, or milk of choice (add more only if needed to thin the batter)
5-10g @capilanohoney Active Manuka Honey MGO 30+ , and extra for drizzling
1 tsp vanilla extract
1 tbsp natural yoghurt, to serve
2-3 fresh strawberries, washed and sliced to serve

    Heat a non-stick skillet over medium heat and spray the pan with olive oil or oil of choice, or melt a tiny amount of butter or spread in it.

    In a medium mixing bowl, combine all ingredients and whisk until smooth. Pour the batter into the preheated pan and swirl until the batter spreads.

    Cook until the underside of crepe is golden brown, about 1-2 minutes.Loosen the edges of the crepe with a rubber spatula then carefully flip. Cook another 1-2 minutes or until done.

    Fill with fresh strawberries, yoghurt & drizzle with Capilano Australian Active Manuka Honey
